The cast of characters:
3/4 cup applesauce
1/2 cup sugar
1/4 cup honey
1 large egg
3/4 cup Greek yogurt
2 1/2 teaspoons vanilla
1 cup flour
1/2 cocoa powder
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup chocolate chips
1/2 cup mini chocolate chips

3/4 cup chopped nuts ~ as the nutty, comedic relief

Directions:
1. Preheat your oven to 425F.
2. Spray your 12-count muffin tin with nonstick spray. Be sure to get every little nook and cranny and do not use paper liners. The muffins will stick to them.
3. Combine applesauce, sugar, honey, egg, yogurt, and vanilla in a large bowl. Whisk all of the ingredients together until they are all smooth.
4. Sift together the flour, cocoa powder, salt, baking powder, and baking soda. Stir into the wet ingredients from the step above. Fold in the regular chocolate chips and nuts .
5. Divide the batter evenly between the muffin tins, filling each one to the very top.
6. Bake for 5 minutes. Now, sprinkle the mini chocolate chips on top of the muffins, reduce the oven temperature to 375F and bake for 13 more minutes.
7. When the timer goes off, insert a toothpick into the center of one of the muffins, if it comes out clean they are ready to be taken out, if it has some goo on it, bake the muffins for a couple more minutes.
8. Remove the muffins from the oven and allow to cool in the muffin tins for a couple minutes, then transfer the muffins to a wire rack.
